The Rules of Engagement:

Japanese steel is legendary for its edge, but it doesn't suffer fools. To keep these in peak condition, avoid the big "nos": no wire, no metal, and absolutely no twisting. Cut diagonally across the fibres to respect the plant and the tool. For heavier work, use the base of the blades rather than the tips. Remember—the harder the steel, the more brittle it can be, so treat them like the precision instruments they are.
