Because these are crafted from hard Japanese carbon steel, they require a bit of devotion to stay in peak condition. To avoid chips, keep them away from wire, stone, or plastic. When you're finished, treat them to a proper clean: remove resin and gunk with a Crean Mate, dry them off, and wipe down with Camellia Oil before storing them somewhere dry. Sharpen them after every use to maintain that surgical precision—it’s a bit obsessive, but then again, so are we.
